From food business owners to trainers, from production managers to hygiene auditors, this qualification meets the food industry’s need for a high level practical qualification with external accreditation.

Who needs this qualification?

Managers, supervisors and senior hygiene personnel such as:
  • production managers
  • trainers
  • owners or managers of food businesses
  • supervisors with intermediate food hygiene knowledge
  • hygiene auditors
  • shift managers or supervisors

This qualification is also suitable for those wishing to deliver CIEH food safety qualifications as part of their training provision.

Why is this training important?

Beyond being accountable, it is important for everyone in a managing or supervising position to have mastered the principles of good practice in food safety, thus gaining the ability to guide and advise on the management of food hygiene in a food business.
The CIEH Level 4 Awards in Food Safety have been designed as a five day programme to provide an in-depth understanding of food safety with an emphasis on the importance of the management of systems and staff.

Please note from The CIEH Annual Moderators Audit of 2010-2011 findings suggest:

Level 4 awards are aimed at managers or aspiring managers,
and the expected competencies for the successful achievement
of these awards are therefore commensurately challenging.

However, there are candidates whose basic underpinning
knowledge and practical application are lacking and do not
meet the required depth for a Level 4 qualification.

A number of candidates appear to have been recruited onto
the course without sufficient prior knowledge and appreciation
of food safety or management principles to meet the exacting demands of a Level 4 qualification.
Consequently, they struggle with the content, terminology and requirements of the training programme, examination and controlled assignment and willbe unlikely to achieve a pass.
Indeed, there is some evidence that candidates move straight from Level 2 to Level 4.

This raises concerns about employers placing their employees on a
Level 4 course in preparation for them to undertake a
management role for food safety without assessing or
appreciating the employees’ capability to cope with the rigours
of such a qualification.Candidates should have achieved at
least a Level 3 award in food safety, or have gained sufficient practical experience in managing food safety, before undertaking either of these Level 4 qualifications.
